Vanilla pods should be kept at 15 degrees or above, not in a fridge or freezer. At cold temperatures, pure vanillin may start to crystalise on the outside of the pod. These white crystals only occurs with a high percentage of vanillin and are actually a sign of quality. Be sure you don't rinse the crystals off as they contain the vanilla flavour.
