At Gourmet Vanilla, we originated the concept of vacuum packing vanilla pods to prevent vanilla pods loosing their flavour when they come into contact with air. We vacuum pack in India straight after curing so all that wonderful vanilla flavour is locked in. In fact, we've found it just keeps on maturing.
Gourmet vanilla always has a higher moisture content than extract quality. Vacuum packing ensures our vanilla pods retain their flavour, freshness and moisture. After curing, the deep brown shiny vanilla pods are sorted, graded, and then vacuum packed before shipping. This ensures our vanilla pods reach chefs in perfect condition:-
* They retain their flavour and freshness for at least 2 years.
* Moisture content is kept at 28-32%
* 28-32% is optimum for flavour & shelf life.
